Beer Queso with Sausage and Black Beans
1/2 lb mild Italian sausage
1/2 tbsp smoked paprika
1 large shallot, diced
3 cloves garlic, diced
1 tbsp olive oil
1 cup - 1 1/2 cup beer
8 oz cream cheese
12 oz sharp white cheddar cheese, shredded
1 can (14 oz) black brains, drained and rinsed
Brown the sausage in a pan over medium heat. Season the sausage with the smoked paprika. Set aside to drain on paper towels.
Sauté the shallots in the olive oil over medium low heat until softened. Add the garlic and sauté for an additional minute. Add 1 cup of the beer. Add the cream cheese and whisk until it melts. Stir in the shredded cheese. Add additional beer as needed to reach the desired consistency.
Add the black beans and sausage and cook for an additional few minutes to heat through.
Garnish with the green onions and serve.
