Guacamole

Moe’s Southwest Grill in Worcester’s Webster Square closed last week. Moe’s was my first job, and as far as high school jobs go, it was a good one. Moe’s is where I learned to make guacamole, and in fact where I learned to like guacamole. This is how I make it.

Ingredients

  • 4-6 ripe avocados
  • 1/4 – 1/2 of a small red onion, diced
  • 2 roma tomatoes, seeded and chopped
  • 1 fresh jalapeno, seeded and minced
  • 1/2 bunch of cilantro, chopped
  • 1-2 limes, juiced
  • 1-2 tsp salt, to taste

Directions

  1. Cut open and pit the avocados, then mash them.
  2. Add the onions, tomatoes, jalapenos (if using) and cilantro.
  3. Add the lime juice and salt, adjusting the quantity of both to taste. Serve with tortilla chips!
