Banana Muffins

These muffins are the most popular muffins with my kids. The recipe is adapted from the always reliable Sally’s Baking Addiction.

Ingredients

  • 1.5 cups (345 g) ripe bananas (3-4 bananas)
  • 6 tbsp (85 g) salted butter, melted
  • 2/3 cup packed (135 g) light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1.5 cups (188 g) flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tbsp hemp hearts
  • Sparkling sugar

Instructions

  1. Preheat oven to 425° and line a muffin tin with 12 liners.
  2. In a large bowl, mash the bananas and brown sugar together. Stir in the egg, vanilla, milk, salt, cinnamon and nutmeg.
  3. Sprinkle the flour, baking soda and baking powder over the wet ingredients. Stir the dry ingredients into the wet, do not over mix. Add the hemp hearts stir just to combine.
  4. Divide the batter evenly into 12 muffin cups (I use a level #12 3.25 oz scoop). Sprinkle the top of each muffin with sparkling sugar.
  5. Bake at 425° for 5 minutes, then reduce the oven temperature to 350° and bake for an additional 18-20 minutes, until the tops are golden brown and a knife inserted in the center comes out clean. Cool and enjoy!
