This recipe is inspired by the kale salad at my favorite restaurant. I like to serve it with a crispy chicken cutlet.
Ingredients
- 5 oz curly kale
- 2 tsp olive oil
- 1/2 cup Caesar dressing (I like Ken’s Creamy Caesar)
- Juice of 1/2 of a lemon
- Freshly cracked pepper to taste
- 1 cup Caesar croutons
- Freshly grated Grana padano (or Parmesan)
Directions
- Wash and dry the kale and remove any tough stems. Tear into small pieces. In a large bowl, drizzle the kale with the olive oil and massage it into the kale.
- Dress the kale with the caesar dressing and then mix in the lemon juice, adjusting the amount of lemon to your taste. Season with pepper and stir in the croutons.
- Grate the grano padano onto the salad until the mountain of cheese seems absurd. Then serve!
